Zesty Quinoa Salad

1 cup quinoa

2 cups water

3 limes, juiced

2 tsp ground cumin

1 tsp salt

1/2 tsp+ red pepper flakes (to taste)

1 1/2 cups cherry tomatoes, halved

1 15-oz can black beans, drained & rinsed

5 green onions, finely sliced

1/4 cup fresh cilantro, chopped


Bring quinoa and water to a boil in a saucepan. Reduce heat to low, cover and simmer until quinoa is tender & water is absorbed (10-15 minutes).

Whisk lemon juice, cumin, salt and red pepper flakes in a bowl.

Combine quinoa, tomatoes, black beans and green onions in a bowl.  Pour dressing over quinoa mixture and toss to coat. Stir in cilantro. Salt and pepper to taste.  


This recipe originally called for 1/4 cup of olive oil, which is a lot of added fat and calories.  I don't use it at all, and I don't miss it.  If you decide to add some of the oil, I recommend just a drizzle.
