1 15-ounce can of petite diced tomatoes
3 cups veggie stock
1 clove garlic, minced
1/2 tsp dried basil
3/4 cup dried orzo
1 cup spinach, packed, washed & chopped
salt & pepper to taste
In a medium pot, combine the tomatoes, stock, garlic and basil. Bring to a simmer.
Add orzo and stir well. Cover and cook for 5 minutes, stirring periodically to ensure the orzo is not sticking.
Add the spinach and stir well. Continue to cook until the orzo is cooked, about 2-4 additional minutes.
Salt and pepper to your liking.
This soup is super simple, quick and, best of all, delicious!!
I make a double batch for my family of three.
If you have any leftovers, keep in mind the orzo will absorb the liquid, so you will need to add some stock when you re-heat.
