2 T lime juice
2 tsp pureed ginger (I cut in smaller pieces and add to the blender)
1/4 cup almond butter
1/4 cup diced onion
1/4 cup water
2 cloves garlic
2 tsp agave (or other sweetener)
1/4 tsp red pepper flakes
1/4 tsp sea salt
Add all ingredients to a blender or food processor and blend until smooth and creamy.
Massage/mix into your favorite salad greens and veggies!
The first time I made this dressing I thought it was a really weird mix of ingredients, but trust me -- it's delicious! Reminds me of the yummy ginger dressing you get at a Japanese restaurant.
I usually make a double batch.
The original recipe calls for massaging this into a salad of chopped kale, shredded carrots and bell peppers, but you can use it on any of our favorite salad fixings or roasted veggies.
