2 cups raw pecans
1 cup pitted dates
1/4 cup honey
1/4 tsp salt
2 1/2 cups vegan dark chocolate chips
2 packages organic firm silken tofu
1 tsp vanilla extract
Combine all ingredients in a food process until mixture resembles a fine meal. Transfer to pie dish and press mixture into the pan (bottom & sides).
Melt the chocolates in microwave or double boiler.
Combine tofu, vanilla and salt in a food processor. Add melted chocolate and blend until smooth.
Pour mixture into pecan pie shell, smoothing the top.
Refrigerate at least 20 minutes or until firm.
