2 large potatoes, washed and shredded
1 cup fresh broccoli, finely chopped (you can use your food processor)
1/2 cup yellow onion, finely chopped
1/2 cup matzo crumbs or panko crumbs
1 tsp salt
1/4 cup nutritional yeast
2 tsp onion powder
2 cloves garlic, minced
After shredding your potatoes, rinse and drain. Use paper towels or squeeze in a kitchen towel to reduce water. Add to bowl with the remaining ingredients. Mix ingredients well (feel free to use your hands to better incorporate ingredients.)
Heat a large, nonstick pan on the stove for a few minutes on medium heat. Scoop potato mixture onto heated pan and flatten with a spatula. Cook for 10 minutes on each side.
*Note: Do not try to turn the latkes too early. They will not stick if you let them cook sufficiently.
Serve hot with your favorite condiment!
